[Signed] Madame Romaine de Lyon. The Art of Cooking Omelettes. Later Printing. 1963. Book and dust jacket are both in very good condition. Book is signed “Mme. Romaine de Lyon.”
In the case of Madame Romaine de Lyon, the old adage was both literally and figuratively true: eggs had to be broken to make an omelet. The year was 1938, and she was a recent immigrant from France to the United States when her husband died leaving her with no means of support. Relying on the cooking skills she learned as a girl in Lyon, she opened up an intimate restaurant with five hundred varieties of omelet on the menu. She and her restaurant became a New York institution (closing only in 2003). The first chapters in this book are memoir; the remainder present her cooking instructions and recipes.
