In the introduction, Botsford pays tribute to the restaurateurs, whose job he compares to “walking a tightrope over Niagara” but with “a soufflé in one hand and a short loin of beef in the other.” Includes reviews of many of the Midcentury’s greatest restaurants, such as the Algonquin, the Colony, El Morocco, Le Pavillon, and Quo Vadis.
