The proprietor of the Green Pastures restaurant in Austin (which half a century hence is still going strong) wrote this book about Texas cuisine. The book—at over four hundred pages—is as seemingly as large as the state itself. Moreover, it is as diverse, with recipes inspired by Mexico, the American West, and the Deep South. The book is divided by region, with sections on Dallas, Abilene, El Paso, etc. Even the King Ranch (among the world’s largest) gets a chapter.
