A syllabub is a classic English dessert; it was also once the pseudonym of The Observer’s cookery writer, who penned classic columns on food for the culinary-minded in midcentury London. The book predates the era when “in season” meant twelve months per year, and the book is arranged accordingly, by month. Wit and sophistication take precedence over ingredient/temperature/time, and it is more droll exposition than actual recipe. This is a perfect gift for the intermediate cook. Never published in the United States it is uncommon here.
